The Secret of Mānuka Honey
Mānuka honey is a wonder of nature and world-renowned for its unique properties. Monofloral Mānuka honey contains a range of beneficial oligosaccharides and prebiotics, amino acids, and methylglyoxal (MGO). MGO is the compound found in mānuka honey that is responsible for its incredible antibacterial effect. Because this compound is not found in other honeys, except in very small amounts, MGO levels are the gold standard for assessing the unique properties of this incredible, pure New Zealand honey.
High MGO levels also indicate that a particular batch of honey is high in both its purity and quality. Here at Biohoney, all our mānuka honey is independently tested to determine its Unique Mānuka Factor (UMF) levels to ensure you only receive the highest quality and purity available. All our honey meets stringent requirements for high UMF. Those bright, beautiful MGO rating numbers on each of our jars of honey are your proof that you’re getting a pure, high-quality, natural ingredient.
The Science Behind our Honey
Unique Mānuka Factor (UMF) refers to an evaluation of the three key chemical markers in mānuka honey: Leptosperin, DHA and Methylglyoxal (MGO). A UMF grading is assigned to the honey is based on the combined levels of all three of these markers. The higher the UMF grade, the greater the presence of these unique attributes and the better its purity, quality, and medicinal benefits. The UMF Honey Association of New Zealand controls and approves all classifications of UMF honey. It operates a world-leading scientific research programme focused on identifying the signature compounds found only in authentic honey made from mānuka nectar.
Not all mānuka honey is made equal. Different grades have different UMF levels. Testing the UMF of mānuka honey is essential as it helps assess the properties and potential uses of a particular batch.
- UMF 5-9: Culinary Grade: excellent for daily culinary use, delicious spread on toast, or when added to drinks as a sweetener or used as an ingredient in cooking or baking.
- UMF 10-15: Medical/Medium Grade: Certified UMF honey with a rating of 10+ or higher is medical-grade. This honey is therapeutic for the skin and can be used to help fight powerful or dangerous bacterial infections.
- UMF16+: Superior High-Grade Honey: The very best mānuka honey features UMF grades of 16 and above. These kinds of honey have the most potent medicinal and antibacterial properties and commonly feature a more intense taste.
Both MGO and UMF are methods used to assess and qualify the concentration of unique natural chemical compounds found in mānuka honey. When applied to the skin or added to the diet, these bioactive compounds can give the body a boost in immunity, skin health, and aid the digestive system. The higher the level of MGO, the darker the honey’s colour and the more intense its distinctive taste. As MGO is a significant contributor to the beneficial, unique properties of mānuka honey, the MGO level is a great way to get a sense of the quality of a specific batch of honey. Here are rough comparisons:
- UMF 5 = MGO 83
- UMF 10 = MGO 263
- UMF 15 = MGO 514
- UMF 20 = MGO 829
- UMF 25 = MGO 1200
